Update old headers for year 2025.
Verified that Tester works correctly in ku040 fpga board using the following command: ``` make tester-fpga-run BOARD=aes_ku040_db_g INIT_MEM=1 USE_EXTMEM=0 ```
If multiple versions of the build directories exist, using `make -C ../<CORE>_V*/` is ambiguous and may cause the Makefile to use the wrong one. This commit added an explicit VERSION variable to specify the correct one to use.
