Gracefully handle deleted log file

If for some reason the .datashuttle folder where the logs are stored is deleted, you can't do anything in the software without an error. Ideally this folder would never be deleted and it may just be an artefact of playing around as a developer, but nonetheless the package should be stable and regenerate the necessary folder if it is missing in this case.
