Future-proof Adapter

This PR adds a new future-proof Adapter that would support future MC versions (until one breaks the API), and also support Paper's remapped versions.

I've been trying for a couple days now to also add a 1_21_R1 adapter to a clone of this PR and I've gotten absolutely nowhere - this is the last thing I need to update a major server to 1.21, is there any chance you can add 1.21 support to this PR or help me figure it out?

This worked on my 1.21 server. Make sure you target the right commit.
