I attempted to run (and possibly write new) tests for this, but got stuck with some errors running 'bundle exec rspec'. Any help in this area would be much appreciated.

It looks like the same errors have occurred running on your Travis as on my local box.

bundle exec rspec spec
The signal EXIT is in use by the JVM and will not work correctly on this platform
bundler: failed to load command: rspec (/home/travis/build/logstash-plugins/logstash-input-beats/vendor/bundle/jruby/1.9/bin/rspec)
NameError: missing class name (`org.apache.logging.log4j.Level')
