Add support for https://github.com/grpc-ecosystem/grpc-spring

Overview:

  • add ecosystem grpc modules
    • still on Spring Boot 3.3.x, but Ecosystem modules works with 3.4.x
  • rename + deprecate lognet grpc modules
    • plan: keep lognet grpc until ecosystem grpc is in use in all apps
  • add examples, update docs

Breaking changes (i.e. for lognet grpc)

  • Renamed artifact names
