  3. Allow importing utils without xESMF present 

    e.g. on Windows, where we can get numba (an xESMF)
but not ESMF

This allows the docs to be built on Windows,
since otherwise the API doc generation fails on trying
to import xesmf

  4. Remove empty cell with no output 

    myst-nb still tries to run it tho

  5. Get tutorial data nb running too, ignore others 

    the save/read paired data ones are based on AirNow--WRF-Chem,
so would likely fail on GH/RTD
