This might sound a little ridiculous, but can I uninstall the Govee Lan Integration after I have added Govee2MQTT? I just dont want to mess anything up. I am not sure which integration goes with which device and am afraid I will mess it up.

I'd recommend looking at the related automations you have configured for the devices you see in the govee-lan-hass integration and making a note of them prior to uninstalling, so that you can review them after installing govee2mqtt to make sure things will work as you expect.

I would uninstall govee-lan-hass prior to setting up gove2mqtt, so that the chances are higher that home assistant will let govee2mqtt use the same entity names that you had with govee-lan-hass, and minimizing the effort required to fixup your automations afterwards.
