Central Logging System wouldn't be a single point of failure or else we mount this over the network?

Well I didn't understand your question correctly but are you saying that the log storage should we network mounted, right?
Apart from this, this issue is probably irrelevant wrt the current structure. @alphadose ?

this could be useful if we were to make an admin panel for monitoring the entire ecosystem
In that panel, we can also view the logs of all instances
Probably we don't need the data lake but a centralized logging mechanism is important
