Point accessibility.jupyter.org to these docs?

@trallard and @isabela-pf recently revamped the documentation for the accessibility repository. It lives here:

https://jupyter-accessibility.readthedocs.io/en/latest/

I think a more memorable name would be accessibility.jupyter.org (which would redirect to accessibility.jupyter.org/en/latest). What do others think?
