Sorry if this is explained elsewhere, but from what I know, at the moment there's no way to get around age-restriction with yt-dl without using cookies so you essentially sign in?

Is that doable with Open Video Downloader?

Yeah it’s described in the wiki:
https://github.com/jely2002/youtube-dl-gui/wiki/Tutorial:-Private-videos-&-playlists

However, the extension for cookies linked there is malware, see StefanLobbenmeier#149
