[macOS] Title bar color doesn't follow the system UI color when automatic light/dark mode is enabled

On Ghostty 1.0.1 on macOS 15.1.1 with Appearance set to Automatic, when I leave the terminal open for long enough that the OS switches from light to dark mode (or the other way around), the title bar still has the previous theme color. If I then create a new tab, that tab has its title bar color set correctly. The color theme of the terminal correctly adapts to the system theme.

How to reproduce

1. Make sure the system Appearance setting is set to Automatic. If you manually switch the OS theme between light and dark, this issue does not occur.
2. Open a Ghostty window.
3. Wait until macOS automatically switches its theme.
4. Open a new tab inside that window.

likely due to the fact that a few options only apply to new surfaces (tabs or splits) instead of already running ones

seems to note some specific edge cases
