Describe the bug

The Elasticsearch Output page is missing huge swathes of parameters supported by the plugin.

For example, Data Stream settings are completely missing, and as I understand it, the expected best-practice way to do logging in Elasticsearch these days is with data streams rather than individual indices.

Expected explanation

Most/all of the supported parameters should be listed in the official docs. Currently it's just a 'further reading' link with no hint that most of the configuration information is in that link.

The example configuration should probably also have a section showing how to set up data streams
