Is your feature request related to a problem? Please describe.

Currently the plugins support "strict json mode" by providing a responseMimeType in the request to the API

Google AI and Vertex AI Gemini APIs support providing a responseSchema:

https://ai.google.dev/gemini-api/docs/structured-output?lang=node#supply-schema-in-config

This enforces the schema of the response on the API side.

We should support this in Genkit.
