I could not reproduce this - I created a .7z file on another Linux system (using Ark) and then opened it in OS8 using Files. It automatically opened using FileRoller. Were the archives you are trying to open created on a Linux system or something else? Files uses framework functions to get the registered default application based on the content-type/mime-type of the file. If you right-click on the file and choose "Properties" you should be able to see what type of file Files identified the file as. You should also get a drop-down allowing you to set the default application for that type of file. You should only need to set it once.

Alternatively you could try installing e.g. Ark from the AppCenter - it should register itself as the default application for .7z files.

Unfortunately I don't remember - probably I created the archive with 7-zip.org on Windows 10

Does it show a mime-type in the Properties dialog?
