Add current LibreChat version to config

Hey, I didn't found any place where I can find out which version of LibreChat is running on an instance.

The footer only contains the version when it gets not overridden.

Would it be possible to add the running version to the config api endpoint?

And maybe showing it in the settings or anywhere else.
