Add options to execute extra commands in Docker container

For our use case we would like to run some extra commands in the Docker build step. Specifically we are using Meltano, and would like to run meltano install during the build step.

It would be great to add a possibility to run extra commands, or maybe a sh file, after the environment variables have been injected into the Dockerfile.
