fix: fix list indentation via using a specific Pandoc version #631

I'm opening this here for discussion but my target is your igraph question.

Locally after cloning igraph and resetting to the commit before the latest bump, I do not get the unwanted list indentation, hence my guess it might be a Pandoc thing.

What pandoc version is installed there by default?

I don't know (which is part of the issue), maybe we could add printing? https://github.com/igraph/rigraph/blob/main/.github/workflows/fledge.yaml must use whathever that's the default on GitHub Actions 🤔
