EventStatusType is a standard schema.org type: https://schema.org/EventStatusType and we are following that model.
If you would like to add sold out (complet) to your events, you could create a custom field (taxonomy).

@MaudeFJ maybe you could discuss with Frederic in the Artsdata meetings how you would want to model sold out shows in Artsdata as a starting point.
