I know what paperless-ng does (no need to explain that in readme), instead maybe explain what the addons can be used for? I still don't get what the integration with home assistant would do.

This is not a Home Assitant integration. It is simply a way to run Paperless-ng as a Home Assistant Addon.

Addon or integration, I still don't understand what it does from the README. What's the use case?

If you want an easy way to install Paperless-ng or you don't have a server to run it on, you can run it on your Home Assistant instance.

The README says "Paperless-ng Home Assistant Addon".
Addon in this context is defined on https://www.home-assistant.io/addons/

Add-ons allow the user to extend the functionality around Home Assistant by installing additional applications.

IIUC there is absolute no functionality added around Home Assistant - it's just another way to run paperless-ng.
And I think it would be great to make that a little more obvious from the README.
