Imported Postman Collection has "phantom" environment variables, how can I edit or clear them.

I imported a collection from PostMan that has collection scope environment variables. When I view the Requests in Insomnia, that refer to the variables I can see they have a value, but I can't change the value in any way.

I exported the collection back out of insomnia, and I see this (just a snippet of the entire json)

When I look at a request in the collection that refers to one of the EnvVars I can see what it resolves to, but I can't edit it, is there a way to edit them, or clear them?
