TLDR; are you able to make a release for arm architecture for Mac? Only thing stopping me using it :)

brew install aom

then set environment vars or link lib include to /usr/loca/

export CPATH=/opt/homebrew/opt/aom/include/;LIBRARY_PATH=/opt/homebrew/opt/aom/lib/

Seems like the cli tools are are avifenc and avifdec. Not avif.
